A long time ago my mum used to order the Simply Cook kits but she never uses the recipe cards so I took them and decided to use it as a baseline on perfecting my own chicken tostados recipe.
This recipe really should use small tortilla wraps but they didn’t have them in the supermarket so large versions it was. I promise they would look better if they had the mini wraps haha!!
Prep time: 10 minutes
Cooking time: 25 minutes
2 chicken breasts, cut into thin strips
1 medium red onion, diced
Half a tin of sweetcorn
One salad tomato
4 small wholewheat tortilla wraps
Half a ball mozzarella, shredded
Optional: Guacamole/sour cream or both
Cut the chicken into thin strips.
In another small bowl create the seasoning for the chicken.
Add 1 tsp cumin, a pinch of sea salt, chilli flakes (amount depends on how hot you like it) and black pepper.
Coat the chicken in the seasoning and set to one side to allow to marinate.
Dice the red onion and tomato.
Section 1/4 of the red onion away to one side and pop into a bowl with the chopped tomato.
Add salt, corinader, chilli flakes and a dash of lemon juice.
Add olive oil into a pan and fry the chicken until cooked. This should take around 10 minutes on a medium heat.
Portion out the sweetcorn and red onion.
Add to the chicken and cook. Splash some hot sauce on top and allow the mixture to cook through.
Shred the mozzarella into small pieces.
Place the chicken mixture central of the tortilla wrap.
Add the mozzarella on top and pop under a low heat grill until the cheese is melted.
The dish will then be ready to serve. I decided to serve it with guacamole on top.
